- 1 lb ziti noodles, or similar shape
- 1 1/2 cups raw cashews soaked in hot water for 5-10 minutes
- 3/4 cup water
- Juice from 1 large lemon (about 2 tablespoons)
- 4 tablespoons nutritional yeast
- 1 garlic clove
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 25 oz jar marinara sauce
- 1 can unsalted diced tomatoes, seasoned as desired
Instructions:
- Preheat the oven to 425°F (220°C).
- Cook the pasta according to the package instructions. Drain and set aside.
- Make the Cashew Cheese sauce: In a high-powered blender, add the soaked and drained cashews, water, lemon juice, nutritional yeast, garlic, onion powder, and salt. Blend until smooth, scraping down the sides as needed.
- In a large casserole dish, combine the cooked noodles and marinara sauce. Stir to combine.
- Spoon the cashew cheese sauce on top of the noodle and sauce mixture, gently stirring to distribute it evenly while leaving pockets of cheese intact.
- Bake, uncovered, for 15-25 minutes, or until the top is lightly golden and bubbly.
- Serve hot, accompanied by a green salad if desired. Enjoy your delicious vegan baked ziti!
