• 1 lb ziti noodles, or similar shape
  • 1 1/2 cups raw cashews soaked in hot water for 5-10 minutes
  • 3/4 cup water
  • Juice from 1 large lemon (about 2 tablespoons)
  • 4 tablespoons nutritional yeast
  • 1 garlic clove
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 25 oz jar marinara sauce
  • 1 can unsalted diced tomatoes, seasoned as desired

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Cook the pasta according to the package instructions. Drain and set aside.
  3. Make the Cashew Cheese sauce: In a high-powered blender, add the soaked and drained cashews, water, lemon juice, nutritional yeast, garlic, onion powder, and salt. Blend until smooth, scraping down the sides as needed.
  4. In a large casserole dish, combine the cooked noodles and marinara sauce. Stir to combine.
  5. Spoon the cashew cheese sauce on top of the noodle and sauce mixture, gently stirring to distribute it evenly while leaving pockets of cheese intact.
  6. Bake, uncovered, for 15-25 minutes, or until the top is lightly golden and bubbly.
  7. Serve hot, accompanied by a green salad if desired. Enjoy your delicious vegan baked ziti!
